chik fil a mac and cheese
1 pound elbow macaroni
4 tbsp butter
¼ cup AP flour
1 tsp salt
2 cups whole milk
10 slices American cheese
1 lb extra sharp cheddar cheese, freshly grated
1 cup shredded mozzarella cheese
Prepare the cheese sauce by melting butter in a large pot, then stirring in the flour until smooth. Gradually add the milk while whisking. Let the mixture heat gently while stirring until it just begins to simmer, about 1–2 minutes.
Reduce the heat to low and begin incorporating the cheese. Add the American cheese one slice at a time, whisking until melted before adding more. Then slowly mix in the mozzarella, followed by half of the cheddar, reserving the rest for later. Continue stirring until the sauce is smooth and fully melted.
Mix the cooked noodles into the cheese sauce, making sure they are evenly coated. Pour everything into a 9×13-inch baking dish and sprinkle the remaining cheddar over the top.
Place under the broiler until the cheese on top is melted and turns a golden brown. Watch it closely, as it can brown quickly depending on your oven.
