#277 shrimp and corn fritters

i am trying to get in as many fresh corn recipes in this year, while sweetcorn is in season. there’s really nothing quite like corn from the farmer’s market. this is a tasty way to use it, by chopping up shrimp, corn and cilantro in a food processor, mixed with spices and egg to bind. they are also shallow fried, so they don’t make too much of a mess. we both gobbled them down. i used sweet chili sauce for dipping, while j made a mix of sour cream and hot sauce. both worked well and were perfect with a squeeze of lime.
