maple dijon salad
inspired by chef resha
chef resha published a dressing that i wanted to try: ¼ cup lemon juice, 2 T red wine vinegar, 2 t dijon mustard, 2 t maple syrup, 2 garlic cloves and ½ cup of olive oil (plus salt and pepper to taste). i thought it would be good on a wintery salad with roasted squash, pepitas, avocado, pickled onion, quinoa and dried cherries. and it was tasty! i am enjoying making lots of different salads as of late.
