from mandy’s gourmet salads
this salad is based on a classic curried chicken salad, but made into a salad salad. it has a sweet and creamy curry dressing, carrots, pineapple, grapes, celery, red pepper, cilantro, chickpeas and quinoa. it’s different, but it works. j really enjoyed this one.
