curried quinoa salad

inspired by the curried quinoa salad from mandy’s that i just made, i decided to make a salad version of a curried cous cous salad. the cous cous (i used the giant variety moghrabieh) was cooked with veggie broth, and then coated in a dressing of olive oil, ACV, maple syrup, turmeric, curry powder, and paprika. then instead of putting all the other ingredients that would usually go in the cous cous mix, i put them on the salad: red peper, carrot, green onion, cilantro, celery, and (not pictured) feta. i also added raisens to the cous cous mix. we used leftover curried dressing, but you could also just use the dressing from the cous cous if it hasn’t all absorbed.
