baked tofu with peanut sauce and coconut-lime rice

this was a super tasty and balanced tofu dish. the peanut sauce is delicious even though it’s not particularly unique, but the pickled peppers were a good idea that i wouldn’t have though of. if you make the pickle and peanut sauce ahead of time, it is weeknight friendly.
