this is a very simple but delicious dish, one that also totally depends on the quality of ingredients. you pretty much don’t need a recipe. it’s just tomatoes breifly marinated in balsalmic, olive oil, basil, salt and pepper, piled on toasts, and topped with parmesan cheese. it was delicious because i use my favorite california olive oil (temecula brand), kumato tomatoes, homemade ciabatta and parmesano reggiano from costco.
