this dish is absolutely incredible. it’s amazing how smoking eggplants creates so much flavor, and melds with the tahini, garlic and lemon. it’s so much more than the sum of its parts. i also made a mayo version several years ago from the same cookbook, and remember liking it, but this one really blew my mind. i used to feel more meh about mediterranean food, but lately i have been obsessed. it’s so worth it to make this dish from scratch.
