from power vegetables
i’ve made this salad a bunch of times, it’s a classic that totally depends on the quality of the ingredients. usually i would hold off until summer tomatoes, but trader joe’s kumato tomatoes are decent enough that i’ve been making a few of these recipes. it’s good fresh, but i think it’s even better a day later when the flavors meld. it’s better with bread, but during passover, matzo will do.
